Since 1862, in order to meet their needs and those of their foundations, as well as to sustain employment in their region, the Cistercian Trappist monks of Chimay have been developing the production of Trappist beers and cheeses which, owing to their character and qualities, are well known and enjoy great success.

Chimay Cinq Cents is a hazy golden color with a fine head and is especially characterized by its enticing aroma of Muscat and raisins arising from an agreeable combination of fresh hops and yeast. The aroma complements a touch of bitterness which the beer leaves on the palate, a bitterness without acidity, but as part of a lingering and enjoyable aftertaste. This top fermented Trappist ale, refermented in the bottle, is not pasteurized. |
Chimay Red (Premiere)ABV: 7% |

The first beer to be brewed by the Trappist monks of Chimay, this premiere ale is noted for its coppery color and creamy head. It has a light, fruity apricot aroma produced by fermentation and those nuances are confirmed upon first taste and enhanced by a light touch of bitterness. Its taste imparts a silky sensation on the tongue…refreshing with a light touch of bitterness. This top fermented Trappist beer, refermented in the bottle, is not pasteurized.

Chimay Blue is principally distinguished by its strong character. It begins with a pleasant aroma of fresh yeast with a light, flowery, rosy touch. This Trappist ale has a relatively dry flavor that uncovers fine, carmelized notes, resulting in a perfect balance between fullness and a slightly bitter aftertaste. |
