Dogfish Head is a microbrewery based in Milton, Delaware.  Dogfish Head had humble beginnings, starting off as a brewpub called Dogfish Head Brewings & Eats in Rehoboth, Delaware in 1995.  It seems Dogfish Head liked extremes; it was the first brewpub in Delaware, and when it opened, it was also the smallest commercial brewery in America. They started off making 12 gallon batches, three times a day, which even for one restaurant was not nearly enough.  There was another obvious reason they were always short of beer; it was great!  Due to many factors, (good beer, good food, live music and a good location), Dogfish Head Brewings and Eats became (and still is) very popular, and demand for their beer was insatiable. So they hired a full time brewer and using vats found in dairy and cannery auctions cobbled together a 300 gallon brewing system. They still were a mom and pop outfit; they still put the bottlecaps on by hand!

The expansion helped a bit with demand, but since Rehoboth is apparently a tourist stop, people from all over the Mid-Atlantic region of the U.S., wanted their Dogfish Head. Dogfish Head got a bill drafted and signed, allowing them to distribute their products, and they were on their way.  This increased demand yet again and it became obvious that, after nine months of using the expanded brewing system, that they would have to separate the brewing operation from the restaurant, So they went and bought themselves some more used equipment and built themselves a microbrewery in Lewes, Delaware, complete with several 3,000 gallon tanks and a bottling line. The owners had a taste-test at the pub to see which brands they should mass-produce.  They chose the Shelter Pale Ale and Immort Ale brands. These were produced at the new location, called the Dogfish Head Craft Brewery in 1997. After a while they moved to their current Milton address, included several more brands to their portfolio and even added a distillery on the second floor.

A cross between a Scotch Ale, an I.P.A. and an American Brown, this beer is well-hopped and malty at the same time. It is brewed with Aromatic barley and caramelized brown sugar.  It is filled with notes of molasses, coffee, ginger, raisinettes and chocolate.  Try this brown ale with Balsamic vinaigrette salads, smoked meats, duck confit, braised ribs, venison, prosciutto, stews or smoked gouda.

This IPA is the flagship beer of the Dogfish Head Brewery. A session India Pale Ale brewed with Warrior, Amarillo & 'Mystery Hop X.' A powerful East Coast I.P.A. with a lot of citrusy hop character and cedar, citrus pine, floral and candied-orange flavors.  The session beer for beer geeks like us!  Spicy foods, pesto, grilled salmon, soy-based dishes, vintage cheddar and pizza are the perfect compliment to this commanding IPA.

Esquire Magazine calls 90 Minute I.P.A., "perhaps the best I.P.A. in America."  This is a big beer with a great malt backbone that stands up to  extreme hopping. The citrusy notes and brandied-fruitcake, raisiny flavor make it an excellent pair for pork chops, beef, grilled fish, frites, focaccia, split pea soup, Stilton cheese and escargot.

A serious IPA brewed with luscious apricots and finished with whole-leaf hops. A "fruit beer for hop heads..." says the Ale Street News.  This thirst quenching brew has a fruity/ citrusy taste with a hint of cedar.  It pairs well with salads, swordfish, Mexican dishes, barbeque and hummus.  Available in spring.

A refreshing neo-Berliner Weisse fermented with honest-to-goodness peaches. Festina Peche is available in 4-pack cases and draft during the sweaty months.  The Berliner Weisse-style is characterized by its intense tartness. In addition to fermentation with an ale yeast, Berliner Weisse is traditionally fermented with lactic cultures to produce its acidic or green apple-like character. It is delicately hopped with a pale straw color and served as an aperitif or summertime quencher. To soften the intense sourness, Berliner Weisse is traditionally served with a dash of essence of woodruff or raspberry syrup. In Festinal Peche, since the natural peach sugars are eaten by the yeast, the fruit complexity is woven into both the aroma and the taste of the beer so there is no need to doctor it with woodruff or raspberry syrup - open and enjoy!  For a delicious summer treat pair it with grilled chicken or fish and a salad.  Because extreme beers don't have to be extremely boozy! Dogfish Head Punkin' Ale is named after the annual Punkin' Chunkin Festival held near Lewes, Delaware the weekend after Halloween. Voted "American Beer of the Year" in January 2000 by Malt Advocate Magazine, Raison D’Etre is a deep, mahogany colored ale brewed with beet sugar, green raisins, and Belgian-style yeast. As complex as a fine, red wine, you will savor the notes of pit fruit.  This winey, rasiney ale pairs tremendously with steak, duck, game, wine-reduction sauces, goat cheese, ham and mussels.

Brewed to a colossal 45-degree plato, boiled for a full 2 hours while being continuously hopped with high-alpha American hops, then dry-hopped daily in the fermenter for a month & aged for another month on whole-leaf hops!!!  120 Minute I.P.A. is by far the biggest I.P.A. ever brewed! At 20% ABV and 120 IBUs, you can see why this beer is called The Holy Grail for hopheads! Limited availability.

A Belgian-style strong ale fermented with blackberries and blueberries.  Black & Blue is made with over 300 lbs of fresh blackberries and blueberries. With a deep purple full body and a long-lasting lacy pink head, this ale is both attractive and delicious! It is tart and fruity! The subtle bitterness of Hallertau and Saaz hops shines through the fruit forward flavor and sets the palate aglow.  This tasty brew has smooth but noticeable alcohol warmth and Belgian yeast gives it a characteristically dry spicy finish. The beautiful interplay of fruit, spice and alcohol is complimented by a soft malt profile and a high level of carbonation. Limited availability.

Burton Baton Ale was first brewed for Michael Jackson's Rare Beer Club for release in 2004. It's provenance lies somewhere between the Burton Ales of England and a Burton Ale that was brewed by the Ballantine Brewery between the wars which was so special that it was never offered for sale. It was rationed to key customers, dignitaries and friends of the brewery. It was aged and blended for over a year in wooden vats with a substantial amount of hops.  Burton Baton is brewed with Warrior and Glacier hops and blended on 2 strains of ale yeast, (one American, one English) and aged on barrel staves of French oak for four months before being blended 50/50 with Dogfish Head 90 Minute Imperial IPA.  Limited availability.

Similar to a beer brewed in China some 9,000 years ago, Chateau Jiahu uses a recipe that includes rice, honey, grape and hawthorn fruits. The formula was obtained from archaeologists who derived it from the residues of pottery jars found in the late Stone Age village of Jiahu in northern China. The residues are the earliest direct evidence of brewed beverages in ancient China. This is truly, a unique beer.

A big, Belgian-style wit, brewed with coriander and orange peel and fermented with Pinot Noir juice. After fermentation, a fraction of the batch is aged in Oregon Pinot Noir barrels and another fraction is aged on oak staves. The beer is blended together before packaging.  This has been one of Dogfish Head’s most popular Limited Edition beers at both the Rehoboth Beach brewpub and at festivals. An unfiltered, unfettered, unprecedented brown ale aged in handmade wooden brewing vessels. Highly roasty, and malty. The caramel and vanilla complexity unique to this beer comes from the exotic Paraguayan Palo Santo wood from which these tanks were crafted. This beer is a modern update on a 9th century Finnish proto-beer. Brewed with rye, they caramelize the wort with white hot river rocks, then ferment it with a German Weizen yeast. In addition to juniper berries foraged directly from the Finnish country-side a sort of tea made with black tea, cardamom, cinnamon, ginger, cloves, and black pepper is added. The spicing is subtle and balanced and Sah’tea is a highly-quaffable, truly-unique brew with a full-mouth feel.
